Characters Description: White odorless crystalline powder. It has special sweet taste with the sweetness degree of about 70% of that of sucrose. Start sublimation at the temperature of more than 200 ℃, melting point of 297 ℃ (decomposition). It is of chemical stability, soluble in water (17%, 25 ℃), slightly soluble in ethanol (0.2% / 80% cold ethanol), insoluble in ether, and pH of 5% aqueous solution is 5.5 - 7.0. There is an isomer i.e. L-β-alanine, and there is no report that it exists in proteins, while contained in the apple juice and so on, with the sweetness degree of being less than that of α-type. It exists in wool, silk and other natural products.
Uses: Nutritional supplements, it is non-essential amino acid, for an amino acid of the highest content contained in the blood, which plays an important physiological role. Flavor enhancer, is used in unfermented products, synthetic sake, composite-type sweetener and so on, with obvious synergism, and the dosage is generally 0.01% to 0.03%. After reacted with sugar by heating (amino - carbonyl reaction), a special flavor material can be generated.
